Woah, Spring has started off with a bang here!

We all got quite sick two weeks ago, and then I was directly plunged into the Spring-grant-cycle-deadline madness, we started lambing, we got the biggest snowstorm of the year so far, and now we are getting highs in the 50s.

What a wild couple of weeks!
I feel like our life is being held together by broth...
Do you ever feel that way?
It took my stomach quite a long time to get back to being ok with eating meals again, so having a constant batch of broth to sip on and make soups with was an absolute lifesaver.
My favorite book for soups/broth recipes is Nourishing Broth by Sally Fallon.

In her book she talks about how the culinary industry defines stock differently than broth, and how confusing it can get. Fortunately in the the book they use the terms interchangeably because the only broth or stock worth eating is one made from bones with fat, meat, and cartilage still on them that all breaks down into a rich collagen-filled liquid base that you can expand upon for so many dishes.

The key is in the jiggle.
If you don't have broth or stock that jiggles, you aren't doing something right and you need to up your ratio of bones that contain joints and connective tissue to get the full benefits of cooking with and consuming broth.
